Many people can’t stand it, but I’m rather fond of lamb. Rich, fatty and delicious, it’s a pungent, heady meat, and I can’t get enough of the stuff. As far as I’m concerned, it’s the Greeks who do lamb best,with their Kleftiko. Lamb kleftiko is a rustic, traditional Greek (Cypriot?) recipe made with super slow cooked lamb,  marinated in a blend of garlic, olive oil and lemon juice.

Literally meaning “stolen” lamb, tradition says that the name comes from that fact that raiders would steal lambs or goats and cook them in underground ovens to both seal the flavour, and avoid getting outed by the smell of it cooking. Modern Kleftiko is slowly cooked in parchment or foil, leaving you with a juicy and tender bit of lamb knuckle, shank or shoulder. Yum!

    We may not agree completely on Altered Beast but my goodness that lamb looks tasty. I swear, it’s folly to put in a extra hour or two after work on Tuesdays and I blame the ION headers for this.
